Diet tea

The Oprah Winfrey show enlightens us with several natural diet supplements. One of these is diet tea. Here are some diet tea recipes explained by lifestyle queen Oprah Winfrey:

Rhubarb Iced Tea

The Ingredients

Chopped rhubarb: 3 cups
Water: 3 cups
Honey: 2 Table spoons
Cinnamon stick: 1
Lemon juice: 1 - 3 table spoons (fresh or bottled)
Lavender or mint sprigs (optional)

The Method

· In a large sized pot place the rhubarb along with water, honey & cinnamon stick.
· Boil it well. Simmer it for at least 15 minutes.
· Now remove the stick of cinnamon.
· Remove the pot from heat. Allow it to steep for at least an hour.
· Strain it in to a pitcher but don't squeeze. It would become cloudy.
· Lastly, refrigerate it for 2 hours just before tasting. For taste add lemon juice and sprigs if you like.

Tea Poached Tilapia

The Ingredients

· Boiling water: 2 cups
· Spice Flavored Black Tea bags and Lipton Orange: 2
· Green onion: 1 (coarsely chopped)
· Fresh ginger: 2 - 4 thin slices - Cut these in about 2 inches per piece.
· Fillets of cod or tilapia or flounder: 1 1/4 pounds

The Method

In a 2 cup glass measuring cup, add water over the Lipton Orange & the Spice Flavored Black Tea bags. Brew for 5 minutes. Now remove the tea bags and set it aside. In the 12 inch skillet, add tea, green onion & ginger. Boil it over high heat. Add the fillets. Now reduce the heat, cover it and let it simmer for around 6 minutes. The fish must flake with the fork. Remove the fillets and serve them in a serving platter. Sprinkle chopped green onions.

Grilled Teriyaki Chicken

The Ingredients

Marinade:

· Fish sauce: 1 table spoon
· Rice Vinegar: 1 table spoon
· White pepper: 1/8 tea spoon
· Dash of the sesame oil
· Cornstarch: 4 teaspoons
· Minced garlic:1 table spoon
· Minced fresh orange zest: 1 table spoon
· Green onions: 2 - Remove the ends and mince it.
· Whole green tea leaves: 2 tea spoons (crushed)
· Boneless chicken breast halves: 4 skinless (5 ounces each, rinsed, patted dry)

Sauce:

· Green tea: 1/2 cup (brewed)
· Honey: 1 tea spoon
· Lemon juice:1 tea spoon

The Method

Marinade:

Take a large bowl mix the sauce, fish, vinegar, sesame oil and pepper. Whisk the corn starch in to vinegar mixture. Wait for it to dissolve. Stir the garlic, green onions, orange zest & crushed green tea leaves. Marinade the chicken. Cover it and refrigerate it for around 2 hours.

Sauce:

Combine green tea, lemon juice & honey. Set it aside until the serving time. Take the chicken from the marinade. Discard the remaining marinade. Pre heat the broiler or grill. Place the marinade chicken on the grill & cook it for around 8 minutes. As per the thickness of the chicken, turn the frill for 8 minutes more. Chicken must become tender and should not be pink in the center.
